Start easy, then level up. Straw-grown oyster and pink-oyster types only need pasteurised straw and clean hands \u2014 the best first project. Sawdust-block and jar-grown types (Lion\u2019s Mane, King Oyster, Enoki, Cordyceps) need a pressure-sterilised substrate and sterile inoculation, so they\u2019re a step up.
